     Refrigerator Rolls

Ingredients
4 tablespoons shortening
1/2 cup sugar
1 teaspoon salt
1 cup water- boiled
1 cup tap water
2 envelopes yeast
1/4 cup warm water
2 eggs
5 - 6 cups unbleached flour
 

Instructions
Place shortening, sugar and salt in large mixing bowl. Pour boiling water over and stir until dissolved. Add 2nd cup water and two eggs slightly beaten
Dissolve yeast in 1/4 cup warm water and add to mixture
Add flour 1 cup at a time until dough is no longer sticky. Fold onto floured board and knead several times. You may also use mixer with dough hook for kneading
Let dough rest for about 10 minutes, then place in greased bowl. Cover with a damp towel. Let rise in warm place until doubled. Punch down. Form cloverleaf rolls. Let rise again. Bake for about 20 minutes in 400 degree oven. Leftover dough may be refrigerated for up to a week.
