     Orange Chicken

Ingredients
4 chicken breasts
1 cup frozen orange juice concentrate
1/4 cup dijon mustard
1/3 cup brown sugar
2 tablespoons gluten-free soy sauce
2 tablespoons canola or vegetable oil
1/4 teaspoon black pepper
3 tablespoons cornstrarch
1/4 cold water
 

Instructions
In a slow cooker put cicken, orange juice, mustgard sugar, soy sauce, oil and pepper. Cook on low for about 6 hours, or until chicken is starting to fall apart. (Or bake in the oven for 1 hour in a baking dish if you don't want to use a slow cooker.)
Reove chicken from slow cooker. Pour the remaining drippings through a colander and into a saucepan. In a cup, mix the cornstarch and cold water until fully mixed, leaving no lumps.
Pour the cornstarch mixture into the saucepan with the chicken drippings. Heat on medium heat, stirring constantly until sauce starts to boil and thicken.
Return chicken and sauce to the slow cooker for about 1/2 hours, or until ready to serve. Serve the chicken over rice and top with the orange sauce.
