1/2 pkg extra firm tofu cut into 1/2 in cubes - Optional
1 can PC Pad Thai Sauce
1 pkg Thai Rice Stick Noodles, soaked according to package directions
2 green onions sliced
1/2 cup chopped peanuts
2 cups bean sprouts
1/4 cup chopped coriander
Instructions
In large skillet or wok heat 1 tsp oil over medium-high heat. Add egg, cook stirring constantly until cooked. Transfer to plate and chop into bite size.
Pour remaining oil into skillet. increase heat to high. Add chicken, shrimp and tofu cook for 5-6 minutes or until chicken in no longer pink inside and shrimp is pink.
Add Pad Thai sauce, noodles, onion and peanuts; cook; stirring gently for 2-3 minutes or until noodles are tender but firm. Stir in bean sprouts and cooked egg until heated through.
