     Toor dal

Ingredients
1 teacup toor dal (yellow lentils)
4 teacups water
0.5 teaspoon turmeric powder
3 cloves garlic
small piece of ginger
3 green chillies (small)
1 small onion (chopped)
1 small tomato (chopped, optional)
0.5 teaspoon black mustard seeds
 
0.5 teaspoon cumin seeds
1 teaspoon red chilli powder (optional)
2 tablespoons ghee (clarified butter) or vegetable oil (as a Kosher alternative)
Pinch of hing (asafoetida) (optional)
Coriander (optional)
Salt to taste

Instructions
a) Wash dal, changing water several times until water appears clear. b) Soak dal in 4 cups water for at least 30 minutes
a) Boil dal in water and turmeric, for 20 minutes till dal is soft. b) Mix and press the dal a bit to make a smooth mixture.
a)Pound garlic, ginger and green chillies and keep aside. b) Heat ghee in a vessel, and add mustard and cumin seeds, the pounded mixture and hing (optional). Fry till slightly brown. c) Add onions and fry till turns pale and soft. Add salt. Then add tomato (optional) and fry for a few minutes till soft.
a) Add the boiled dal and chilli powder (optional), and mix well. Add a little water if too thick, and allow to boil. Remove from heat; ready to serve. b) Garnish with coriander (optional)
Serving Suggestions
Good to serve with basmati rice
