     SL-Maindish-Meatloaf

Ingredients
2 lbs. lean ground beef
2 eggs slightly beaten
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup chopped green or red bell pepper
1 tsp. dried basil
1 tsp. garlic powder
salt & pepper to taste
1/4 cup shredded parmesian cheese
 
1/4 cup tomato sauce
1-5oz. can evaporated milk
1 cup of crumbs or oatmeal
2 tbs. tomato sauce or ketchup

Instructions
In large mixing bowl, combine beef, eggs, veggies, cheese, sauce & seasoning. Mix well. (I use my clean hands.) Add evaporated milk and crumbs or oatmeal. Mix well.
Shape into log and place in loaf baking pan. Spoon tomato sauce or ketchup over the top.
Cover and bake for 15 minutes at 400 degrees then lower temperature to 350 degrees for 45 minutes. Serve with shredded Parmesan cheese sprinkled over the top.
Serving Suggestions
Serve with baked potatoe or rice and broccoli.
