     Vegetarian Cholent

Ingredients
1 cup cholent beans
1 cup dried brown lentils
4 potatoes, peeled and chopped
1 large onion, chopped
3 cloves garlic, shopped
3 carrots, peeled and chopped
1 cup old fashioned oats (not the quick cook type)
2 cups pearl barley
3 tbsp salt
 

Instructions
Soak beans overnight. Place the beans and lentils in a large pot. Cover with water. Bring to a boil, covered and cook 5 minutes. Turn the heat off and let the mixture sit for one hour. Rinse thoroughly and drain. Place the bean mixture into the crock pot. Add the potatoes,onion, garlic, and carrots. Add water to come to the top of the pot. Cover and cook on high for an hour. Uncover and add the oats, mix in. Pour in the barley, pushing it just below the surface, but not all the way to the bottom. If necessary, add more water to come to the top. Sprinkle with the coarse salt. Cover and turn the heat down to low and cook overnight until ready to serve.
I also added sweet potatoes, ketchup, and honey to the recipe.
