Beat the cream cheese and sugar together until fluffy, around 3
minutes.
Add in the peanut butter, and beat until combined.
Add in the egg and vanilla, and beat until combined, scraping
down the sides of the bowl to make sure everything is evenly
mixed.

Place a dollop of the cream cheese mixture on top of each Oreo
(2-3 tablespoons each).
Crush the 7 Oreos that you set aside and sprinkle them over
each muffin cup, pressing down into the cream cheese mixture a
bit to ensure that they stick.
Bake for 20-25 minutes, until the edges are just barely turning
golden.
