     Beef Vegetable Soup

Ingredients
1 lb. ground beef
1 green bell pepper diced
1 yellow onion diced
2 lg potatoes diced
can of diced tomatoes
one package of beef au ju
small can of corn drained
1/4 cup of dill pickle juice
2 garlic cloves minced
 
tablespoon salt
1/2 tablespoon celery salt
1/4 tsp red pepper
1/2 tsp dried rosemary
one bay leaf
pepper to taste

Instructions
In medium soup pot brown ground beef, drain fat. add pickle juice, spices and can of diced tomatoes. Add approxiamately 6 cups of water. More for thinner soup, less water will create a thick stew.
Add onions, bell pepper, and potatoes. More water may be needed to cover vegetables completely. Mix Au ju package with 1 cup cold water and then add to the soup pot. Boil on medium high heat for 30 minutes or until potatoes break apart with a fork.
Add drained corn at the end so corn stays crisp and adds a nice sweet touch to the soup.
Any vegetables can be added or substituted. If you add carrots or cabbage it is a good idea to cook them seperately and add at the end like the corn because they will make the soup much sweeter.
Serving Suggestions
Goes great with cheese toast or corn bread.
