     Spicy Black Beans

Category   Salads - Soups - Sidedishes
Sub Category   None
Servings   4
Preptime   1/2 hour

Ingredients
1 can black beans, drained
1/4 cup chopped onion
2 cloves minced garlic or 1 teaspoon crushed garlic
1/4 cup chopped green or red bell papper
1/4 cup of your favorite salsa (I like PACE medium)
Optional- 1 tablespoon chopped fresh jalapeno (if you like more heat)
Optional- 1 tablespoon chopped cilantro
salt and cayenne pepper if desired

Instructions
Saute onion, garlic, and peppers in a little poil over medium heat, until the onion is translucent.
Add the black beans and salsa. Cover and simmer over low heat for 20 minutes to blend the flavor. Stir in the cilantro and add salt and/or cayenne pepper to taste during the last 5 minutes. Add a little water if it thickens too much.
Serving Suggestions
Side dish for any Mexican or Tex-mex meal
