     Miso Soba with Greens and Beans

Ingredients
8 oz. 100% buckwheat soba noodles
1 lb broccoli, chopped
1 tsp olive oil
6 cloves garlic, minced
1 bunch swiss chard (1/2 lb), rough stems removed, roughly chopped
1 cup thinly slived green onions, plus extra for garnish
1/2 tsp salt
1 16 oz can azuki beans, rinsed and drained
1/3 cup miso
 
1/2 cup hot water
4 tsp toasted sesame seeds
Sriracha hot sauce, to serve

Instructions
Prepare a pot of salted water for boiling soba. Meanwhile, preheat a large pan over medium high heat. Sautee the broccoli with a bit of cooking spray and a pinch of salt for about 5 minutes. Cover the pan and flip over or twice. Broccoli should be browned in some spots. Add a splash of water at the end, cover for another minute. The pan should be steaming. Remove broccoli from pan and set aside.
Once water is boiling in pot, use a mug to remove a 1/2 cup of water and stir miso into it. Then cook the noodles according to package directions. Drain when done and toss with a little bit of sesame oil so they don't stick together.
Preheat the large pan again over medium heat. Saute the garlic in oil for about a minute until fragrant. Add chard, green onion and salt and saute for about 5 minutes, until wilted. Add beans to heat through.
Now add drained noodles to the pan along with miso mixture and broccoli. Saute for about 2 minutes. Serve with sesame seeds, green onions and Sriracha.
Serving Suggestions
Add fresh ginger to the garlic and use sesame oil for all of it instead of olive. Could sub other types of greens or beans.
