Put enough oil in bottom of fry pan to cover and heat on medium heat. When hot add rice and stir. Keep stirring until rice turns to a carmel color. Be careful not to burn.
Add tomato sauce and 2 C water. Stir, add spices. Bring to boil.
if adding small onions or onion quarters, add now.
Turn heat to low, cover and simmer until rice is cooked and liquid is evaporated. About 30 minutes.
