     Roast Beef

Ingredients
1 medium size chuck roast or rump roast
1 pkg dry onion soup mix
1 pkg Au Jus Gravy mix
3 c water
Salt and pepper to taste
 

Instructions
Preheat oven to 325 degrees. Put roast in roasting pan or dutch oven.
In large measuring cup or bowl, mix together onion soup mix, au jus mix and water. Pour over roast. Season with S & P to taste.
Cover tightly, may have to cover with foil. Bake 3-3-1/2 hours.
Remove roast from pan to slice. Mix together 1/4 c flour with 1/4 c hot meat juices in cup. Slowly add back to roasting pan on stove top with medium heat. Stirring constantly to thicken gravy.
