Preheat oven to 475°. Allow chicken to sit at room temp. 1 hour. Rinse and dry chicken. Remove wishbone. Generously sprinkle cavity of chicken with salt and pepper. Insert 5 cloves garlic and thyme and rub all around cavity with hands. Tie chicken up with kitchen string. Pour butter on top of chicken and season with salt, pepper, thyme,sage, and clove garlic garlic. Roast on rack in pan 25 min. Reduce temperature to 400° and cook an additional 35-45 min. Check temperature and allow to sit covered 20 min. before carving.
