remove the zest from the 3 lemons and process it,
add sugar and pulse till finely minced with sugar.
beat butter till soft, add sugar mixture, and beat
till creamed. slowly add eggs one at a time to
mixture. then slowly add lemon juice to mixture,
then salt. mix until combined.
pour mixture into 2 quart pan and cook on low for
about 10 min, stirring constantly, to thicken. never
allow mixture to boil, thickens at 170 degrees.
remove and from heat and allow to cool in refrigerator.
