1 cup of berries (blueberries, strawberries, mixed, ect...)
16 oz whipped cream cheese, softened
1/4 cup of sugar
1/2 cup of lemon curd
2 eggs
Instructions
preheat oven to 325. line muffin tin, sprinkle with
either coconut or graham cracker to line the bottom
the bottoms. Puree berries and spoon 1/2 tsp over
the coconut or graham.
beat the cream cheese, sugar, then add lemon curd.
add eggs one at a time beating in between each.
Divide mixture evenly among muffin cups. top with
more pureed berries and swirl. Bake 20 min or until
almost set in the middle
cool completely. add whipped cream and top with a
berry for fun. if you have extra they freeze easily
for a later snack, or to premake them for an event.
