     Mom's Pesto

Preptime   30 mins

Ingredients
2 C. Fresh basil leaves
1/4 C. Parsley
1/4 C. fresh spinach leaves
1/4 C. toasted pine nuts
1/4 C. GOOD olive oil
2 T. Romano cheese, grated --see note
2 T. Parmesan Cheese, grated --see note
6 cloves garlic, pared
salt & pepper to taste
 
Water, as needed
1 C. Heavy cream
See note- GOOD balsamic vinegar
See Note- I substitute asiago cheese in place of whatever i may be out of.

Instructions
Toast the pine nuts on 300 til golden & they smell good. (like 12-15 mins.)
Place all ingredients except water & cream in blender or food processor; process til smooth. Add water as needed to create desired consistency.
Place in saucepan; heat to simmering. Stir in cream.
NOTE- if i have a good balsamic sitting around, I always add just a dash for better flavor. Try it!
Serving Suggestions
This is FANTASTIC with my Asparagus stuffed chicken breasts.
