     Borscht Soup

Ingredients
2 c shreded peeled beets
1 c shreded carrots
1 c chopped onion
4 c beef broth
2 c shredded cabbage
1 T butter
1 T lemon juice or red wine vinegar
fresh dill last 5 min
sour cream garnish
 
more dill for garnish

Instructions
Cook beets carrots and onion in broth for 20 min. Add cabbage and butter cook uncovered for 20 min. Stir in lemon and dill for last few min.
Better the next day so if you can make ahead and the garnish is manditory.
