     SL-Soup-Italian Wedding Soup

1 pkg Italian Breakfast Sausage Links (NOT Maple)
1 Lg onion & red bell pepper chopped
2 cartons chicken broth
1 tbsp minced garlic
1 cup tiny pasta
1/4 cup spinach finely chopped
1/2 tsp Italian Seasoning blend
1/2 stick butter

Quickly brown links on med-high heat in olive oil or coconut oil. Roll frequently to keep from burning. Cut each link into bite size pieces (4-5 per link). Set aside in a bowl.
In large soup pot combine all ingredients except spinach. Add seasoning & garlic. Bring to a boil until pasta & veggies are tender. Remove from heat. Stir in spinach. Salt & pepper to taste. Serve in wide mouth soup bowl with a sprinkle of mozzarella cheese on top. With bread-sticks or knots & side salad.

Italian garlic bread, sticks or knots with gardeh salad.
