     Butternut Squash

Ingredients
1 butternut squash
4 Tablespoons butter
Salt/pepper to taste
 

Instructions
Preheat oven to 400 degrees. Cut squash in half lenghwise (cut off stem). Remove all seeds with spoon. Prick skin with fork or knife all over.
Line a 9X13 inch cake pan with aluminum foil. Add about 1/4 cup water to pan. Place squash cut side down in pan.
Bake 40-45 minutes or until tender. Test with form to be sure squash is well done.
Remove from oven. Scoop out flesh while still very warm. Add butter and salt and pepper to taste and mash well. Can be reheated or frozen
