     Beef Brisket

Ingredients
7 to 10 lb. untrimmed whole brisket
2 cups catsup
1 cup water
1/2 cup Worcestershire sauce
1/4 cup lemon juice
3 Tablespoons liquid smoke
1 Tablespoon chili powder
2 teaspoons celery seed
2 teaspoons salt
 

Instructions
Preheat oven to 450 degrees. Pat brisket dry using paper towels. Place in roasting pan or in bottom pan of broiler rack. Do not cover. Place on middle rack in oven and brown for 30 minutes.
In a 4 quart glass measure, combine remaining ingredients. Microwave on HIGH 3 or 4 minutes or just until mixture begins to boil.
Drain rendered fat from brisket. Pour sauce over brisket. Cover pan with heavy-duty aluminum foil. Reduce oven temperature to 300 degrees. Cook 1 1/2 hours. Turn brisket over and baste with sauce. Add water if needed. Continue cooking another 1 1/2 hours or until tender.
Cool and refrigerate sauce. Cool brisket, wrap and refrigerate overnight. Slice across grain 1/2 inch thick. Use 70% power to reheat.
