     Apricot stuffed porkloin

Ingredients
11 ounces dried apricots, quartered
1 4lb. porkloin
6 garlic cloves, minced
2 1/2 T fresh rosemary, chopped
1 1/2 c. low-sodium fat free chicken broth
salt and pepper
 

Instructions
In medium sauce pan bring apricots and 1/2 c. water to a boil. Remove from heat, let set 10 min
Cut a 1 1/2 wide slit throught center of pork loin lenghwise. Insert a wooden spoon handle and widen the opening. Mix apricots, 1/2 the garlic and 1/4 t. salt. Pack mixture into opening
Tie porkloin at 1 1/2 in intervals. Preheat oven to 325 Grind rosemary 1/4 t. salt and 1 t. pepper to a coarse rub. Mix in garlic, rub all over loin.
Place porkloin on rack in roaster and roast for 45 min.Remove from oven and pour broth over pork. Return to oven and continue to roast, basting every 15 min. until internal temp is 150 up to 1 hour more.Let rest 20 min Strain juices pour over roast.
