     Mac n' Cheese

Ingredients
coarse salt and ground pepper
1 pound elbow pasta
4 tbsp butter
1 small onion, chopped
1/4 cup all-purpose flour
4 cups milk
1 1/4 cups shredded yellow cheddar cheese
1 1/4 cups shredded white cheddar cheese
8 oz ham, diced into 1/2 inch pieces
 
2 slices white sandwich bread

Instructions
Preheat oven to 375. In large pot of boiling salted water, cook pasta until firm (al dente); drain
Meanwhile, in 5-quart heavy pot, melt butter over medium heat. Add onion. Cook; stirring until softened, 3 to 5 mins; whisk in flour to coat onion. Whisk in milk until no lumps.
Cook, 6 to 8 mins (thick and bubbly). Stir in 1 cup each cheese. Season with 1 tsp salt an 1/4 tsp pepper.
Toss pasta with cheese mixture; fold in ham. Transfer to 9' by 13' baking dish or individual dishes. In food processor, pulse bread until large crumbs form. Toss together w/ remaining 1/4 cup each cheese and 1/4 tsp salt. Top pasta with bread crumb mixture and bake until top is golden, about 30 mins.
