     Crusted salmon filets

Ingredients
4 6 oz salmon filets
2/3 c. Panko bread crumbs
1 Tbs. grated lemon peel
2 Tbs. chopped Italian parsley
1/4 tsp. salt, freshly ground pepper
1 Tbs olive oil
1 Tbs. Grey Pupon mustard
additional olive oil to coat non-stick skillet
 

Instructions
salt & pepper salmon filets. Coat tops with mustard.
mix crumbs, lemon peel, parsley, salt & pepper, and olive oil. Evenly spread on salmon, & press down to adhere.
In oven proof skillet, sear skin side of salmon 2 minutes.. Place skillet with salmon in 450 degree oven. Roast for 10 min.
Serve with additional lemon slices.
