     Crazy Delicious Chicken Noodle Soup/Stock Portion

Ingredients
1 (2 1/2 to 3-pound) fryer chicken, cut up
3 1/2 quarts water
1 1/2 to 2 teaspoons Italian seasoning
1 teaspoon lemon-pepper seasoning
3 cloves garlic, minced
4 bay leaves
3 chicken bouillon cubes
Kosher salt and freshly ground black pepper
2 carrots roughly cut
 
Whole yellow onion, peeled
2 celery stalks, roughly cut

Instructions
Add all ingredients to a soup pot. Bring to a boil then simmer on LOW heat for an hour. Remove chicken from pot and set aside to cool.
When chicken is cool enough to touch, pick bones clean, set chicken aside on a plate. Return bones and skin to pot, simmer for another 1.5 to 2 hours.
Remove and discard bones, skin, bay leaves, carrots, celery, and onion, strain or skim stock to remove impurities.
To save time, you can use a rotisserie chicken from the store, it'll still come out really good, but this stock is seriously killer from scratch.
Serving Suggestions
Serve along with a slice of warmed Sourdough or French Bread.
