Chop everything in big 1 to 1 1/2 inch pcs. Stir in a bit of olive oil.
Spread on two baking pans. Roast at 425 for 1/2 hr. Stir and cook
another 15 min or so.
I did sprinkle with salt and pepper and tucked in a few sprigs of
thyme.
