     Cauifower Soup

Ingredients
1 T oil
2 c thinly sliced leeks (2 large)
2 tsp minced garlic
4 c cauliflower floretts (small)
1 1/2 c cubed sweet potatoes
1 1/2 tsp curry powder
1 tsp cumin
4 c chicken broth
1/2 tsp salt
 
1/4 tsp pepper
1 c cooked brown and wild rice blend
1 c evaporated 2 % milk
1/2 shredded swiss cheese

Instructions
Saute leeks and garlic about 3 min. Stir in cauliflower sweet potato curry and cumin. cook for 1 more min. Add broth salt and pepper. Bring to a boil. Reduce heat to low and cover and simmer 15 min. Transfer 1/2 soup to blender and puree till smooth. Mix back into the pot and add cooked rice and milk and cheese. Tastes better second day.
