     Chocolate Layer Cake

Ingredients
3 c sugar
2 1/2 c flour
1 c unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
3 lg eggs
1 1/2 c buttermilk
1 c strong brewed coffee cooled
 
3/4 c veg oil
1 tsp vanilla
4 oz unsweetened chocolate squares melted cooled
Frosting; 1 1/4 c sugar
1/3 c cocoa powder
1 c whipping cream
6 oz semi sweet chocolate squares
1 pkg (8 oz) cream cheese softened
1 c butter, 2 tsp vanilla

Instructions
Heat oven to 350 and lightly grease 3 9inch cake pans. Line bottom with parchment paper. Lightly grease the paper. Combine sugar flour cocoa baking soda and powder salt. Set aside.
In another bowl beat eggs on high speed about 3 min. Add buttermilk coffee oil vanilla and melted chocolate. Mix on low speed till well blended. Gradually add dry to wet. Dividebatter evenly between the pans and bake for 25 to 30 min. Cool pans on a wire rack for 10 min. Remove cake from pans. Cool compleatly before frosting.
Frosting- Whisk together sugar cocoa and whipping cream in med sauce pan. Cook slowly over med heat whisking constantly until mixture comes toa gentle boil. Cook 1 min. Remove frome heat and stir in chocolate and stir till melted. Stir in vanilla. Let cool to room temp. In a lg bowl beat cream cheese and butter on high speed until smooth. Add cooled chocolate mixture and beat on med till well blended. Refrigerate frosting about 1 hour. Don't let it get too firm or you won't b able to spread. Can be decorated with chocolate curls and strawberries. Keep in fridge and let cake stand at room temp for 30 min before serving.
