     Lemon Cake

1 cup sweet butter
2 cups sugar
3 eggs
3 cups flour
1 tsp baking powder
1/4 tsp salt
1 cup buttermilk
3 tbsp lemon juice
grated zest of one lemon
1/4 cup butter
1 1/2 cup confectioners sugar
3 tbsp lemon juice
curls of lemon rind for garnish

Cream butter and sugar. Beat in eggs, one at a time. Mixture should be light.
Mix flour, baking powder and salt. Add to butter mixture alternating with buttermilk. Begin and end with flour mixture. Add 3 tbsps of lemon juice and the grated zest of one lemon.
Bake in a nonstick tube pan for 50 minutes at 300 degrees. Test for doneness with toothpick.. I found it took longer to bake but I didn't write down how much longer..
Glaze - optional - cream butter and confectioners sugar, add lemon juice. Decorate with curls of lemon peel.
