     Banana Cake

Ingredients
½ cup shortening
1 cup sugar
2 eggs unbeaten
Mix together these three
1 ½ cup mashed bananas
¼ cup milk
1 T. lemon juice
 

Instructions
Cream shortening and sugar, add eggs. Sift dry ingredients and add alternatively with banana mixture. Put batter in two 8” round pans. Bake375 degrees for 20 minutes or until done. And if you want the cakes to come out of the pan buy some Bakers Joy aresol spray with flour. Works like magic to get the cake out of the pan.
One thing I learned from Jay’s mother was to use butter about any way and most things will taste better. On the ½ cup of shortening I use ¼ cup shortening and ¼ cup butter. And really watch the time as if you over bake the cake it just ain’t good. I usually set the timer for 15 minutes and the second the cakes start looking brownish I start using a toothpick and re-setting the timer for 2 minutes. And I tryto use really ripe bananas but you can use fresh ones, just mash them on a plate and let em brown for a half hour or so.
