     Eight Bean Soup

Ingredients
1/4 cup black beans
1/4 cup red beans
1/4 cup pinto beans
1/4 cup navy beans
1/4 cup Great Northern beans
1/4 cup Lintel beans
1/4 cup split peas
1/4 cup black eyed peas
2 quarts water
 
1 large chopped onion
1 clove minced garlic
1/2 to 3/4 teaspoon salt, season to taste
1/2 to 1 pound cooked ham, diced
1 16 ounce can tomatoes, undrained and chopped
1 10 ounce can tomatoes and green chilies, undrained
1 can corn, optional

Instructions
Wash beans; place in a large pot. Cover with water (to cover 2 inches above beans). Let soak overnight. Drain beans. Add water, onion, garlic and salt. Cover, bring to a boil. Reduce heat; simmer 1 1/2 hours or until beans are tender. Add remaining ingredients. Simmer for 30 minutes, stirring occasionally. For best flavor, prepare day before serving.
