     Blue Hill Granola

Ingredients
4 C rolled oats
1/4 C brown sugar
1/2 C walnuts, coarsely chopped
1/4 C sunflower and/or pumpkin seeds
2 tsp ground cinnamon
1/2 C apple juice concentrate, thawed
2 tbsp honey
2 tbsp vanilla extract
1/2 C dried blueberries or cranberries
 
1/3 C raisins
1/3 C thinly sliced dried apricots

Instructions
preheat oven to 400. spray baking sheet with nonstick cooking spray. stir together oats, brown sugar, walnuts, seeds, and cinnamon in large bowl. mix apple juice concentrate, honey, and vanilla in small bowl. drizzle over the oat mixture and stir to coat. spread the mixture onto prepared baking sheet.
bake granola, stirring every 5-7 mins, until it is crisp and golden, 20-25 mins. transfer to a bowl and stir in dried fruits. let cool completely.
