8 cups (about 5) peeled and chopped potatos- russett or Yukon Gold)
3 c reduced sodium chicken broth
1 c beer/stout
3/4 c (3 oz) grated Gruyere cheese
3/4 c (3 oz) grated Cheddar cheese
1/2 c 2% milk
Instructions
Melt butter in large sauce/soup pan over med heat. Add ham, onion and carrot. Saute 10 mins. Cook, covered, 10 mins. Add potatoes and broth; cover and simmer 20 mins. or until tender.
Process until smooth. Add beer, cheese and cook until cheese melts. Add milk until desired consistency is reached
