     Hawaiian Wedding Cake

Ingredients
2 eggs
2 cups granulated sugar
2 cups self-rising flour
2 teaspoons baking soda
1 20- ounce can crushed pineapple with juice
1 cup coconut
1 cup chopped nuts
TOPPING
 
8 -ounce package cream cheese
1 stick butter or margarine softened
2 teaspoons vanilla or lemon extract
1 1/2 cups powdered sugar

Instructions
For cake, mix first four ingredients well. Add pineapple, coconut and chopped nuts. Mix well into egg mixture.
Preheat oven to 350 degrees. Grease a 13 by 9 by 2 inch pan. Pour mixture into pan and bake for 40 minutes.
For topping, mix cream cheese, butter and flavoring until smooth. Add powdered sugar and continue mixing until creamy.
It is best to refrigerate cake if weather is hot. Cover well to peek moist.
Serving Suggestions
Easy to make. This is a rich cake, so small pieces are best.
