     Crustless Quiche

Ingredients
1/4 butter
1/4 cup whole wheat flour
3/4 cup low-fat milk
1 cup low fat ricotta cheese
4 ounces light cream cheese at room temp.
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon dijon mustard
5 eggs plus 2 egg whites
 
6 ounces swiss cheese shredded
1/4 cup fresh grated parmesan cheese
olive oil cooking oil spray
1 small onion minced
2 tablespoons seeded and chopped poblano peppers6
6 cherry tomatoes halved

Instructions
Preheat Oven to 350. Melt butter over medium heat in medium saucepan. Stir in flour; cook, stirring until the sauce thickens. Remove from the heat; set aside.
In mixing bowl, beat the eggs and egg whites. Slowly add the cream cheese mixture and the flour mixture. Fold in the swiss and parmesan cheeses. Liberally coat a 10-inch pie plate with cooking oil spray (I like to line my pans with parchment as well then respray with cooking oil spray) Pour mixture into pie plate. Sprinkle with onion, peppers and tomatoes at top.
Bake for 50 minutes until puffy and lightly browned. Knife at center should come out clean.
