Cook shells as directed on package. While they are cooking, saute onions until clear. Mix up potatoes as directed on box using recipe for 4 cups. Add the cream cheese and parsley while stirring.
Cover bottoms of 2 tinfoil pans with 1/2 of the onions. Stuff shells with potato mixture, placing 20 in each pan. Add the remaining onions to the top of each and top with crushed crackers.
Bake in preheated 350 degree oven for 25-35 minutes.
