In a shallow baking dish, melt 3-4 tablespoons butter. Roll chicken pieces in a mixture of 2 cup rice crispies, 1 tsp salt, 1/2 tsp pepper. Dip top sides of chicken in melted butter, then place chicken in baking dish.
Top with leftover crushed cereal. Bake uncovered at 375 for 1 hour. Do not turn.
