Spray 2 nonstick baking sheets with vegetable cooking spray, set aside. Cut the dough into 24 equal pieces. On a lightly floured surface; roll each piece of dough into a 12 inch rope. Place 1 inch apart on prepared baking sheets. Cover baking sheets with kitchen towels and let rise in a warm place for 20 minuets. Preheat oven to 350 degrees. Brush dough lightly with egg white. Sprinkle with desired topping. Bake until golden, about 15 minutes. Place baking sheets on a wire rack and cool for 10 minutes. Transfer bread sticks to rack and cool completely for savory bread sticks, serve with salsa.
