     WInter Split Pea Soup

Ingredients
1 large onion
1 leek optional
1 carrot
parsley best fresh
2 celery sticks
herbs such as rosemary and time
optional to add soup powder or soup base
8 cups of water
500 grams of split peas dry weight
 
salt and pepper to taste

Instructions
Fry everyting except the peas in some olive and canola oil tillonions are a bit brown. It is best to add the herbs at the end so that they do not burn
add the water and split peas and soup powder and cook until the split peas are soft
you may partially or completely blend with a hand held blender. I prefer partially.
Serving Suggestions
serve with croutons or dry toast from old bread.
