Preheat oven to 350 degrees.
For the crust, mix graham cracker crumbs, 3 Tbsp sugar, and melted butter thoroughly. Press into the bottom of a 9 inch Springform pan. Bake for 10 minutes.
For the filling, combine the cream cheese, flour, and 1 cup of sugar in a heavy duty stand mixer. Beat on medium until smooth. Add eggs, one at a time, beating on medium for one minute and scraping bowl after each addition. Stir in sour cream and vanilla.
Bake for 70 minutes. Remove from oven and place on cooling rack. Refrigerate overnight.
Remove side of Springform pan, use two large spatulas to lift cheesecake onto serving tray of choice. Slicing is easiest with unflavored waxed dental floss.
