     Petti Di Pollo

Ingredients
1 stick butter
2 whole, boneless chicken breasts
1/4 cup lemon juice
4 tablespoons flour
1 cup whipping cream
1/2 cup Marsala (or other light wine)
salt to taste
 

Instructions
Beat chicken breasts between plastic wrap until about 1/4 inch thick. cut into 1-inch strips. Roll strips in flour.
Melt butter in frying pan. Add chicken strips. Turn after one minute. Cook about one more minute (do not brown). Add whipping cream, lemon juice and wine. Cook about 4 more minutes over low heat, stirring occasionally. Do not boil. Add salt to taste. Serve over rice.
This has always been a favorite in our family for special occasions. I usually mold the rice in a ring and serve with fresh spring peas in the center and good homemade yeast rolls. We usually have a light lemon cheesecake for dessert.
