     Sour Cream Banana Bread

Ingredients
1 1/2 cup flour
1 tsp baking soda
1/2 tsp salt
1 cup sugar
2 eggs
1/2 cup butter, softened
1 tsp vanilla
1 cup sour cream
2 ripe bananas, mashed
 
1 1/2 cup chopped pecans

Instructions
Sift flour, baking soda, and salt into a large bowl. Beat sugar, eggs, butter, and vanilla in medium bowl. Add the sour cream, mashed bananas, and pecans and mix well. Add to the dry ingredients and stir until blended. Pour batter into greased large loaf pan. Bake at 350 degrees for 1 hour. Cool for 10 minutes before removing from pan. Prepare coconut topping and spread on warm loaf.
Coconut Topping- 1/2 cup packed brown sugar, 3/4 cup chopped pecans, toasted, 5 Tbs butter, 1 cup sweetened flaked coconut. Combine brown sugar and butter in saucepan. Cook over medium heat until butter is melted, stirring to blend well. Remove from the heat and stir in pecans and coconuts. Spoon over loaf while warm.
