Ingredients
For the meringue- 2 egg whites
1-1/2 cups caster sugar
1/2 tsp vanilla
1 tsp white vinegar
1 tsp cornflour (cornstarch)
4 tbsp boiling water
For the filling- 1-1/4 cups cream, whipped
sliced kiwifruit, strawberries, etc.
 

Instructions
Place all meringue ingredients in a medium sized bowl and beat with an electric beater until mixture is smooth, shiny, and stiff- about 12 minutes.
Meanwhile, place a sheet of greaseproof paper on a baking tray. Spoon whipped meringue mixture onto tray, forming a 23cm circle.
Bake in the middle of the oven at 180 degrees for 10 minutes, reduce the heat to 150 degrees and bake for a further 45 minutes. ALLOW TO COOL COMPLETELY IN THE OVEN, NO PEEKING!
Spread whipped cream on top of pavlova and top with sliced fruit.
Serving Suggestions
Serve with passion fruit and chocolate chips on top.
