Thinly slice potatoes and put in a bowl. Add a small
amount of oil and combine with your hands.

Spray a large microwaveable plate with cooking
spray. Lay potatoes out in one layer with no slices
touching. Sprinkle all slices with a small amount of
salt.

|
Microwave on high for two minutes, or until some of
the slices start to brown. Flip each slice over and
cook for another minute, or until the edges are
brown and crispy.

|
Cool potatoes on the tray for a minute, then move to
paper towels to soak up extra oil.

Serve with white or malt vinegar.
