Whisk together apple juice, apple juice, honey, mint, chives, salt and pepper. Core apples and slice. Place sliced apples into marinade for a minimum of 30 minutes, maximum 2 hours.
Preheat oven to 375. Sprinkle salmon with pepper. Skin side down in a lightly oiled roasting pan. Place apples on salmon. Sprinkle with brown sugar.
Bake 20 to 25 minutes.
