     Antipasto Vegetable Skewers

Ingredients
1 head cauliflower (about 5 cups)
2/3 cup olive oil
1/4 white wine vinegar
3 Tbsp water
2 cloves garlice, minced
2 tsp chopped fresh thyme leaves, or 1 tsp dried
1 tsp finely grated lemon zest
3/4 tsp salt
1/4 tsp pepper
 
2 bell peppers-red, orange, or yellow, cut into 1 inch pieces
1 cup pitted green olives, halved
1 cup light packed fresh basil

Instructions
Place cauliflower into steamer basket and boil. Steam until somewhat soft, not hard (about 4 minutes). Remove from boiling water and cool.
In a large bowl whisk together oil, vinegar, water, garlic, thyme, lemon zest, salt and pepper. Add cooled cauliflower, bell peppers, and olives, and toss to coat.
Cover and marinade at room temperature for 1 hour. Reserve remaining marinade and use as salad dressing.
If you do skewers, add basil leaves to the skewers with the vegetables.
