     Soup-Cream of Cheese Soup

Ingredients
2 C diced potatoes
1/2 C shredded carrots
2 T chopped onion
1/2 C diced celery
1/2 C cooked ham
1/4 C butter
1/2 C flour
2 C milk
2 C chicken broth
 
1/2 C Velveeta

Instructions
Boil first 4 ingredients until tender and drain. While these are boiling, melt 1/4 cup of butter and add 1/2 cup of flour. (mixture will be lumpy)
Warm 2 cups milk and slowly add to butter and flour mixture. Mix well. This should be a very smooth sauce.
Add 2 cups chicken broth and 1/2 lb. cubed cheese. Stir until cheese is melted. Do not boil. Add ham and vegetables to soup. Stir.
