     Fattoush Salad

Ingredients
2 (6inch) whole wheat pitas
butter flavor cooking spray
2 tbls white wine vinegar
1 1/2 tea honey
1/4 tea ground coriander
1 tbl chopped parsley
1 tbl olive oil
2 medium tomatoes, each cut into 8 wedges
2 small pickling cucumbers quartered lengthwise and diced
 
1/2 cup prechopped tricolor bell pepper
1/4 cup prechopped red onions
1/3 cup pitted kalamata olives, halved
1 (16 oz) can chickpeas (garbanzo beans) rinsed and drained
1/2 (10 oz) package torn romaine lettuce
1/3 cup (1 1/3 ounces) crumbled feta cheese

Instructions
1. Preheat oven to 450. 2. Separate each pita into 2 rounds; cut into 6 wedges. Arrange pita wedges in a single layer on a baking sheet. Coat wedges with cooking spray. Bake at 450 for 6 minutes or until lightly browned.
3. While wedges bake, combine vinegar and next 4 ingredients in a large bowl, stirring with a whisk. Add tomato and remaining 7 ingredients; toss well. Crumble pita wedges and add to salad; toss well.
