     Strawberry-Rhubarb Pie

Ingredients
2 cups thawed frozen rhubarb
1 1/2 cups thawed frozen strawberries
1/2 cup sugar
1/3 cup flour
1/4 tsp salt
1/4 tsp ground cinnamon
Pastry for a 2-crust pie
1 egg white, slightly beaten
1 tbsp lemon juice
 
1 tbsp butter or margarine

Instructions
425F. Put the rhubarb and strawberries into a bowl. Mix together the sugar, flour, salt and cinnamon. Pour the sugar mixture over the fruit and stir very gently. Roll out half the pastry and line a 9 inch pie pan. Brush the bottom well with the egg white. Roll out the remaining pastry for the top crust.
Turn the fruit mixture into the pastry-lined pan. Sprinkle with the lemon juice and dot with the butter. Adjust the top crust over the fruit. Trim, seal and flute the edge. Bake 45 to 50 minutes or until the crust is golden brown.
