     BARS - pumpkin cream cheese bars

1/2 cup spelt flour
1 tsp cinnamon
1/4 tsp pumpkin pie spice
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 egg of choice (flax, chia, 1 tsp energ.)
3 tbsp brown sugar
2 packets nunaturals stevia
1/2 cup canned pumpkin
2 tbsp nondairy milk
2 tbsp oil (coconut)
1/2 tsp pure vanilla extract
1/4 cup silken firm tofu (frosting)
2 tbsp plus 1 tsp tofutti non hydrogenated cream cheese
1/4 tsp vanilla extract

Preheat oven to 350 F. Combine dry ingredients, then add in wet. Spread into an oiled 8×8 pan and cook for 20 minutes. Note- You can sub agave for the sugar; they’ll just be fluffier/cake-ier. Let the pan cool for at least ten minutes before cutting or frosting the squares. Also, the flavors seem to intensify and these taste even sweeter the next day.
FROSTING- Blend the tofu until smooth, then add the other ingredients and blend again.
