- Finely dice tomatoes, pepper, scallions,
jalepeno peppers, garlic and cilantro.
- mix together with dash of salt, lime juice, and
vinegar.
Mango Salsa- Substitute 6 ripe mangos for the
tomatoes.
Tomato-Orange Salsa- add 2 diced oranges
(including zest from one orange) and 1/2 cup of
orange juice.
Black Bean Salsa- double above recipe and add 1
ten oz can of drained rinsed black beans and
quadruple lime juice and vinegar.
Pineapple Salsa- substitute 1 diced fresh pinapple
for the tomatoes and 1 small can of pineapple
juice.
